Oatmeal Cookies

Oatmeal cookies (with chocolate chips) ;) are one of my FAVOURITE cookies! There is nothing better than biting into a warm, chewy oatmeal cookie. One thing I love about this recipe is how easy it is to make with ingredients you probably already have on hand. It’s also a fairly large batch so I like to bake some and then freeze some dough too, so when you want some quick cookies one day, all you need to do is throw them in the oven! 

This recipe is from my friend Jessica Henderson. It was her grandmother’s recipe (Doreen MacCallum). 

Here’s what you need:

1 cup shortening or butter

1 cup brown sugar

1 cup white sugar

2 eggs

1 tsp vanilla

1 tsp salt

1 tsp baking soda

1½ cups flour

3 cups oatmeal

* You can add chocolate chips, raisins etc, as desired. 

 

Here’s what you do:

Combine all the ingredients and bake at 325 degrees for 10 - 12 minutes!

OR

Prepare them for later by either making dough balls or shaping the dough into a roll, wrap in wax paper, freeze, and then slice!


 

These oatmeal cookies are so simple to make and so delicious!
