Energy Cookies

We had these cookies as one of our Fall 2025 Open House snacks, and handed the recipe out to everyone who came! They were a BIG hit, and we wanted to share the recipe on here for you to make too!

Energy Cookies can be made using either Chocolate Chips or Raisins (everything is the same except for a few ingredients noted at the bottom of this list)

From the kitchen of: Jessica Henderson

INGREDIENTS:

Option One with Chocolate Chips:

1 cup whole wheat flour

1 1/2 cups large flake oats

1 tsp baking soda

1/2 cup unsweetened shredded coconut

2 tbsp sesame seeds

3 tbsp ground flak seed

3 tbsp chia seeds

2 tbsp pumpkin seeds (chop if you wish)

4 tbsp sunflower seeds

1/4 cup semi sweet chocolate chips

1/3 tsp salt

1/4 cup softened butter

3/4 cup brown sugar

1/2 cup apple sauce

1 large egg

1 tsp vanilla extract

Option 2 with Raisins(or favourite dried fruit):

All ingredients above are the same, except swap the Chocolate Chips for Raisins, and then add:

1 tsp of cinnamon or nutmeg

1 finely grated carrot

DIRECTIONS:

Preheat oven to 350 F

Mix wet ingredients, then add dry ingredients on top.

Mix until combined.

Makes 14 large cookies, or 28 small.

Roll dough into balls, and press down lightly before baking.

Bake 8-12 minutes depending on size.

Enjoy!
