Cinnamon Buns

There is nothing like waking up on a chilly Sunday morning and biting into a cinnamon bun with a hot coffee beside you. This is a tried and true recipe from my friend Jessica Henderson, and it is absolutely worth sharing!


Ingredients:

DOUGH

1 cup milk

½ cup butter, softened

½ cup brown sugar

2 tbsp vanilla

1 tsp salt

5 cups all-purpose flour

2 ¼ tsp instant yeast

4 eggs


CINNAMON FILLING

½ cup butter, softened

1 cup brown sugar

2 tbsp cinnamon

4 grated apples & pecans (optional), stirred together 


GLAZE

1 cup powdered sugar

¼ cup heavy cream (35%)

1 tbsp vanilla

Directions:

  1. Mix the milk, butter, brown sugar, vanilla, and salt in a small pot. Warm it enough that everything melts together. Stir occasionally.
  2. Add half of the flour and all the instant yeast to your mixer. Mix gently to combine.
  3. Add your warm milk mixture to the flour.
  4. Add 1 egg at a time, beating until smooth. Continue to do this until all the eggs have been added. Then, switch to a dough hook and add the remaining flour.
  5. Remove from mixer and knead until a soft dough forms that is no longer sticky to touch – about 5 minutes. Once it’s no longer sticky, place the dough in a lightly oiled bowl, cover, and let rest in a warm place until dough doubles in size, up to 2 hours.
  6. Once your dough is ready, flour your work surface, your hands, your dough, and the rolling pin. Then roll your dough into a large rectangle shape (about 18” x 12”).
  7. Stir together all of your cinnamon filling ingredients and then spread evenly over the dough, leaving 1-2” uncovered along the top edge.
  8. Roll the dough into a long, tight log from the covered long edge to the uncovered long edge.
  9. Brush the outside of the log with oil or butter.
  10. Slice into 12-16 sections and place in a lightly greased baking pan. Let rest, uncovered, until the dough doubles in size again and the rolls fill the pan.
  11. Bake at 350 degrees for 40 - 45 minutes.
  12. Remove from oven and let cool. Then, mix together the glaze ingredients and drizzle over the rolls.
  13. Pour yourself a cup of your favourite hot beverage and enjoy!
