Oatmeal Cranberry Cookies

Oatmeal cookies are such a comfort food, aren't they? This recipe is really easy to make, and is bound to be a favourite! You can choose whether or not you include the white chocolate drizzle, but I think it makes the cookie a little more special.

 

COMBINE:

¾ CUPS BUTTER

1 CUP BROWN SUGAR

 ​BEAT UNTIL FLUFFY

ADD:

1 LARGE EGG

1 TBSP VANILLA

​BEAT UNTIL SMOOTH

ADD:

1 ½ CUPS ROLLED OATS

1 ¼ CUPS FLOUR

½ TSP BAKING POWDER

½ TSP BAKING SODA

½ TSP SALT (optional)

½ TSP CINNAMON (optional)

​BEAT UNTIL COMBINED, ADD

2 CUPS DRIED CRANBERRIES

Directions:

DROP 2 TBSP DOUGH ONTO LINED BAKING SHEET 2-3” APART

BAKE AT 350 DEGREES FOR 9-10 MINUTES. REST FOR 5-10 MINutes BEFORE TRANSFERRING TO WIRE RACK TO COOL.

White Chocolate Drizzle:

In a small bowl, combine:

¼ cup white chocolate chips AND 1 teaspoon oil.

Microwave in 30 second intervals, stirring each time, until melted.

Place in a Ziploc plastic bag, snip a tiny bit off the corner of the bag. once COOKIES HAVE cooled, drizzle over the tops of the cookies as desired.
