Strawberry Rhubarb Pie

I don't know about you, but I can't hear the words "strawberry rhubarb" without thinking of summer. Save this one for the next time you want a special dessert that will have everyone begging for the recipe! 

 


Ingredients

Filling:

1/3 cup brown sugar
1/3 cup white sugar
1/4 cup cornstarch 
1/4 tsp salt
1 tbsp orange juice
1/2 tsp vanilla extract 
3 cups rhubarb (1/2” chopped)
2 1/2 cups chopped strawberries

Stir together in a large bowl


Crumble Topping: 
3/4 cup flour
1/2 cup brown sugar
1/2 cup oats
1/2 cup cold butter

Combine until crumbly


Pie Crust (GG’s Best Secret):
1/2 cup melted butter
1 cup flour 

Mix well and then pat into pie plate - yes - that’s it!!!! THE BEST.

DIRECTIONS:

Fill (uncooked) pie crust with fruit and top with crumble. Bake at 400 degrees for 20 minutes, then 350 degrees for 30-35 minutes.

Cool on rack. Enjoy!
